Pate recipe: banana and spinach appetizer

Pate recipe: combines curried bananas, spinach, coconut milk, cream cheese and green lentils - great with crudites, crackers or potato chips as an appetizer.

Serves 4

INGREDIENTS:

6 oz. canned green lentils, drained

6 oz. cream cheese

1/4 lb. frozen spinach, thawed and chopped

1 cup ripe bananas, cut into chunks

1 clove garlic, peeled

1 oz. butter, softened

1 cup thick coconut milk

1 red onion, cut into wedges

2 eggs, hard boiled

1 tsp. salt

1 tsp. black pepper

1 tbsp. curry powder

METHOD:

Using a food processor, blend green lentils, cream cheese, frozen spinach, bananas, garlic, butter, coconut milk, red onion, hard boiled eggs, salt, black pepper and curry powder. Mix until smooth. Chill for 1 hour and serve cold in a bowl with crudites, crackers and potato chips.
