Sour-dough yeast recipe

This easy sour-dough yeast requires no dry active yeast.

INGREDIENTS

Keep bake a piece of (raw) bread dough from previous baking

1 cup of dry meal

1 cup flour

2 cups warm water

Place the dough in a dish and cover it with one cup of dry meal, until needed.

When ready to use, add the warm water and the flour to the dough and mix until it is smooth and elastic.

Leave this mixture in a warm place overnight. The mixture should then be frothy.

Use as needed instead of the usual yeast. The entire quantity is the equivalent of about 2 teaspoons dry active yeast.
